Eating gluten free can be very frustrating. I crave food a lot, but rarely do the gluten-free versions live up to their gluten-containing cousins. I think this is especially true in restaurants. Too often, restaurants treat gluten-free foods as healthy foods. There is definitely a place for it. But just because I have to eat gluten free doesn't mean I don't want junk food too. Luckily, I'm a chef and I can make anything I want. Plus, I can then share it with you. And I'm excited to share this gluten free fish and chips recipe with you!
The good thing about this gluten free fish and chips recipe is that whether you eat gluten or not, I'm willing to bet that this will be one of the best fish and chips you've ever had. I know. That's a bold statement. But I stand behind it. If you eat gluten, replace the gluten-free flour with regular all-purpose flour. Are you ready for this? I know I am. Let's go for it!

Whether you're gluten-free or not, these will probably be some of the best fish fries you've ever had. I know that's a bold statement, but I stand by it. The fries are super crispy, but airy on the inside. The fish is soft with a light and crispy, aromatic batter. Oh, and did I mention it's gluten free?

- 2 large cod fillets cut each into two to three pieces
- 1 1/2 cups gluten-free all-purpose flour for baking, separately Koristio sam Bobov Redmill
- 1 tsk bicarbonate of soda
- 1/2 tsk dried dill
- zest of 1 lemon
- 1/2 tsk kosher salt
- 1/4 tsk black pepper
- 1 egg
- 1 cut soda

- 2 large rice potatoes
- oil for frying

instructions
Fisk
In a large bowl, mix 1 cup flour, baking powder, dill, salt, pepper and lemon zest. Mix well.
Add the eggs and baking soda. Mix until fully combined.
Refrigerate the dough for 20 minutes before using.
Dip the cut fish in the remaining flour and shake off all the excess.
Dip the fish in the batter and fry two to three pieces at a time in a deep-sided fryer or pan at 365°F. Bake for about 7 minutes, turning halfway through.
Serve immediately.

Wash the potatoes with a brush under cold running water.
Cut the potatoes into approximately rectangles. 2 cm (3/4 inch) wide and long potato.
Place the sliced potatoes in a bowl and rinse under cold water until the water runs clear. Fill the pot with water, add a large pinch of salt and let it boil over high heat.
Boil the potatoes until they start to fall apart when pierced with a fork.
Drain the potatoes and spread them on a grill. Let the potatoes soak for about 10 minutes.
Fry the potatoes in batches at 325°F until they begin to brown. This will take 5 to 7 minutes. Shake the excess oil from the pancakes and return them to the cooling rack. Allow the potatoes to cool to room temperature before frying them again.

Fry the pancakes again for about 5 minutes or until golden brown. Drain and toss in a medium bowl with a generous pinch of kosher salt. Serve immediately.

How to make gluten free fish and chips
What makes a good fish and chips?
So what makes a good fish and chips? Well, let's start with the fish. The fish should be soft and flaky, not overcooked. The dough should be baked, crispy, golden brown and delicious. It should not be greasy or wet at all. The potatoes should be crunchy when you bite into them, but soft and airy on the inside. Sounds good? Well, that's exactly what we're going to do.

Let's start with the potatoes. Now these are no ordinary pancakes. These are chunky, hand-cut fries that are the crispiest on the outside, softest on the inside you'll likely ever have. There is a secret technique I learned from the first oneHeston Blumenthalwhich we would watch. Let's see.
Manual French Fries Cutter
Often when you see "Hand Cut Fries" on a menu, that means the fries are cut internally using a chip cutter. Here, when I say "hand cut", I mean hand cut. I really wanted to make these fries super crispy and fix that fries need some stuffing. So I opted for thicker cut fries. The fact that they are much easier to cut didn't even occur to me.
First, wash the potatoes with a brush or cloth under cold running water. Dry them and cut the potatoes lengthwise into thumbsticks. Place the fritters in the pan and rinse them with several changes of cold water. Do this until the water runs clear.






Cooking french fries
Place the fritters on the stove over high heat and let them boil. Cook the potatoes until they are soft enough to break when pierced with a fork, but not so soft that they are completely mushy. This should take about 10 minutes of simmering, maybe a little longer. When the potatoes are cooked, drain the water and put the fritters on the grill. When the potatoes sit on the shelf, all the excess moisture from the potatoes evaporates and the potatoes dry out. It will also change the yellowish color to white. Let the potatoes soak for at least 20 minutes.
Why cook potatoes?
Cooking the potato naturally softens it, but it also gives texture to the surface of the potato. This texture is the key to getting a really crispy outer shell on the finished pancakes.




Baked french fries
The next step in preparing these incredibly crispy fries is to blanch them in oil. If you've ever made french fries before, you're probably familiar with this step. Usually this first frying in oil is done at a lower temperature than the last frying. The goal is to cook the potatoes all the way through. But our potatoes are already cooked, so why bother? This is a good question. This first spawn will do two things. First of all, it will help remove all the residual moisture hiding inside the potatoes. Second, it will begin to form a crispy outer layer. Generally, this first bake would be at 300°F. But for our purposes, we bake the potatoes at 345°F for about 5 to 7 minutes or until the potatoes are golden brown.



Cooling pancakes
After frying in oil, they must be cooled to room temperature before frying again. It's actually best to chill them in the fridge, but it's not necessary. Chilling the potatoes helps them get really crispy. Cool fritters on a wire rack, rather than on a flat surface. This will prevent the potatoes from becoming greasy. Also remember not to overload the fryer. Fry the potatoes in two to three batches, giving the fryer time to come back up to temperature after each fry.
Frying
Ok, so you've washed, hand cut, boiled, dried, fried and cooled your potatoes. All that remains is to fry them once more, salt them and enjoy them. For this final roast, turn the fryer on to 365°f. Place pancakes. You can make more per batch than when you blanch. Fry for 5 to 7 minutes or until the fritters are golden brown and very crispy. Remove the potatoes from the oil, drain and place in a bowl with a large pinch of kosher salt. Serve immediately.


Do you need a deep fryer for this?
You don't need a deep fryer for this at all, but it's the safest option. Your other option is to fry the fish and chips in a pot or wok full of oil. If you go this route, be sure to leave at least 2 to 3 inches of headroom in the container so the oil doesn't overflow. Also, place the pot or wok on the back burner so it's less likely to tip over or tip over. If you're using a pot or wok, you'll also need a candy or deep-fry thermometer to know the temperature of the oil. If you do, be careful. Hot oil is dangerous and you don't want to spill it on yourself or others. Also, if the oil overheats, it can burn. If this happens, cover the pan with a lid and call 911.DO NOT PUT WATER ON HIGH FIRE!!
What kind of oil should you use?
Rapeseed oil is commonly used for frying. It is quite cheap and has a high smoke point. However, use peanut oil for a cleaner taste and maybe a little healthier. It is more expensive, but I prefer it for frying. And you can strain it, put it in a closed jar and store it in the refrigerator for several months. You just have to pull it out when you want to bake something.
Gluten-free fish in batter
How to make gluten-free fish batter
Okay, we made pancakes. Let's move on to the fish. Fish batter is actually the same asrecipe for gluten free sweet and sour chicken ballsI did it a while ago. The only difference is that I add dill, lemon zest and black pepper to the fish batter. This dough is made gluten-free, not by adding a bunch of crazy ingredients, but by using gluten-free all-purpose or baker's flour. To make it gluten-free, use regular all-purpose flour. Other dough ingredients are baking powder, salt, egg, baking soda and, as I said, dill, lemon zest and black pepper. Knead the dough and put it in the fridge for 20 minutes to cool. The colder the dough, the crispier it will be.










Fish preparation
You can use any white fish for this recipe. Cod and catfish are good choices, but I was lucky enough to get cod, so I went for that. I had two large cod fillets, so I cut each into three parts. Pat the fish dry, then toss in half a cup of gluten-free (or regular all-purpose) flour.


Beat and bake the fish
Shake off the excess flour from the fish and dip it into the batter. Take the fish out of the batter, let all the excess drip off and put it in the fryer. When doing this, keep the fryer basket down. If you put fish in a basket, put it in oil, the fish will be fried in the basket. Use a fork and be careful not to break the piece of fish that the fork goes through. Dip the fish about halfway into the hot oil, then toss it gently for a few seconds before sliding it gently with the fork into the oil. This will help begin to form a crust that will prevent the fish from sticking - Bake the fish at about 365°F. 6 to 7 minutes. If you want to serve it right away, bake it for 10 to 12 minutes. Either way, turn it all the way around.







Fry the fish twice
You can simply grill this fish and it will be delicious. But I think a double birth is a better option. Double frying allows all the fish to be cooked and ready to go, then you can finish it off in the fryer just before serving to get it really crispy. This is best if you are cooking for a group of people as you can fry several fish at once on a different grill. You can also touch and grill the fish the day before, refrigerate it on a rack uncovered, and then grill it whenever you want. The second roast should be cooked at 365°F and will take about 5 minutes.
I can't believe it's gluten free fish and chips
A bit of lemon and dill really pops and complements the flavor of the fish perfectly. Serve gluten-free fish and chips with tartar sauce and coleslaw. If you get the chance, have fish and chips with water to make the whole experience really special.
